Sunday: Sticky Molasses Ribs (from Add a Pinch Cookbook) + Southern Potato Salad + Best Southern Baked Beans + Georgia Peach Crisp (from Add a Pinch Cookbook) (Slow Cooker, Add a Pinch Cookbook)

Monday: Leftovers

Tuesday: Cilantro Lime Shrimp Avocado Salad + Ice Cream Sandwiches (with Peanut Butter Chocolate Chip Cookies with No Churn Vanilla Ice Cream) (10 Minutes, Make Ahead Dessert)

Wednesday: Family Night Out

Thursday: One Pan Pesto Chicken + Honey Lime Fruit Salad  (30 Minutes)

Friday: Pineapple Jalapeno Poppers + Skillet Steaks with Gorgonzola Herbed Butter + Skillet Roasted Sweet Potatoes + Caprese Salad with Balsamic Glaze (30 Minutes)

MEAL PLAN TIPS:

Saturday:
Chicken Caprese Pasta Salad: The great thing about this salad is it is delicious served either hot or cold! So if you want a hot pasta dish, make it right before you serve it – it’s ready in only 20 minutes! But it’s oh so delicious after it’s been refrigerated and served as a cold salad too! You decide which way you like it best – or enjoy it both ways: hot tonight and cold for leftovers on Monday. That’s my plan! 🙂

Strawberry Pie: This fresh, no-bake beauty is so juicy, delicious, and simple! Prep time is only 20 minutes, but I’ll make mine earlier in the day so that it has the needed refrigerator time to set. Delicious!

Sunday:
Sticky Molasses Ribs: These are from the cookbook.  I’ve already made the sauce and have it in a container in the refrigerator. The ribs are in the freezer and I’ll let them thaw overnight Saturday night. On Sunday morning, I’ll add the ribs and sauce to the slow cooker and go on about our day of family activities with Bart for Father’s Day! These are so simple and scrumptious!

Southern Potato Salad: Make the potato salad the night before and refrigerate – so scrumptious and easy.

Best Southern Baked Beans: This cooks for a while to bring out that amazing, rich flavor, so you can make this earlier in the day if you wish and reheat.

Georgia Peach Crisp: This is such a scrumptious – and simple – recipe from my cookbook! It comes together so quickly. I’ve been stalking the farmer’s market for the first fresh peaches of summer and I most definitely loaded up on them this week!  Serve it with a dollop – or two – of vanilla ice cream if  you wish.  🙂

Monday:
Leftovers: We’ll enjoy leftovers of either cold Chicken Caprese Pasta Salad or some of last night’s Father’s Day supper!

Tuesday:
Cilantro Lime Avocado Shrimp Salad: This is such an easy, tasty salad for summer! It’s ready in minutes, but you could make the salad earlier, add the dressing ingredients and toss right before serving for supper.

Ice Cream Sandwiches: You can make both the Peanut Butter Chocolate Chip Cookies and the No Churn Vanilla Ice Cream earlier in the day so you just have to assemble the sandwiches for dessert!

Thursday:
One Pan Pesto Chicken: This one pan dish is another quick-fix supper favorite!
Honey Lime Fruit Salad: Ready in minutes, you can mix this up earlier in the day and refrigerate to let all the flavors combine together. Juicy and delicious!

Friday:
Skillet Steaks : I enjoy a grilled steak so much, but there’s just something magical about this steak seared in a hot skillet! I like to season mine several hours before I’ll be cooking it to heighten the flavor of the steak.

Gorgonzola Herb Butter: I make this ahead and store it in the fridge until ready to top these hot, sizzling steaks. Please don’t skip this herbed butter – it’s an amazing final touch!

Caprese Salad: I love this with fresh, ripe tomatoes and fresh basil. I prefer to make this right before supper and serve immediately. So good!
